Ingredients
2 large red peppers
3 garlic cloves
4-5 tablespoons of olive oil
1 small can of anchovies
Method
- First you must heat the oven to 180 c (400F).
- Wash peppers, put in a dish and roast in the oven for about 10 – 15 minutes on each side (depending how large they are) then leave to cool down.
- Peel and remove seeds then cut into thin strips measuring about 1/2 inch.
Heat oil in a frying pan. - Flatten/squash garlic with a knife and add to oil.
- After a minute add the strips of red pepper and gently fry for another 7 – 10 minutes.
Serve mixed with anchoves – delicious hot or cold – by themselves or on top of crunchy bread or toast.
